The Official TV Site Veggetti

Best $14.99 I have spent in a long time!  It is the Veggetti and turns veggies into long, thin strips of “pasta”, but without the carbs, calories and guilt! I have been using zucchini with mine, and after I twist it through the little machine, I pop it in the microwave for about 2 minutes, and add toppings.

Here is what I have tried so far:

pizza sauce and a little parm cheese

soy sauce and a little red wine vinegar

soy sauce, PB2, and a packet pf splenda – tastes just like Pad Thai!

If you are a Pinterest person (I am), search zucchini spaghetti.  You can also use cucumber, potatoes, carrots, or anything else that can be twisted through this little gadget.

Yay for new foods and new gadgets that make eating healthy more interesting and easier!!

DietBet   Set Up Or Join A Weight Loss Game.


I am always looking for (and needing) motivation.  I find it a lot on Instagram (I am lduval14, follow me and then see who I follow…a ton of great people and motivational sites).  One girl I follow on Facebook and Instagram is Sunshine.  Her blog title is Sunshine’s Journey to 199.  She is a great person and is also working hard to obtain her goals.

She is who introduced me to Diet Bet.  It is a website where people can set up “games” for weight loss.  It is monitored closely so people cannot cheat, and you pay to enter the game.  If you win, you split the pot of money with the other people who also won.  So, worst case scenario, you win your initial money back and best case, you win some extra money for smaller jeans!

Right now, the game I am in is with Sunshine and the goal is to lose 4% of my body weight in 4 weeks. It cost $25 to join the game and the “pot” is now over $21,000!!!  You can share success, discuss strategies, like comments, become friends with other gamers, and really find a good support system in an easy to use, online forum.  You can also share your workouts and connect other apps (like my fitbit) to help you track your activity on this site as well.  I will definitely let you know how it goes and I am also planning on starting my own game once I get back from vacation because I am sure I will need the extra motivation!

Next is AchieveMint.  This is a no-brainer.



Basically it is exactly as the picture says. If you are an app user, mostly a fitness app user, you create an account, keep tracking your weight, workouts, steps, etc. like always and AchieveMint uses your data (kind of like you would give information through a survey, but without the survey….or work…or anything) and once you hit a certain amount of points, you receive a $50 gift card.  Period. Nothing else.  Like I said, no-brainer.  It takes some time to accumulate your points, but who cares, you are working out and stuff anyways, might as well get a little something in return.  Like I said, new jeans 🙂

Why I Decided to Go Public May 20, 2014

If you look back, you will notice I have been keeping this blog for a few years now. I started this the first time I lost all this weight, which was over two years ago. Last time I lost about 75 pounds in 10 months. This time, so far, I have lost about 82 pounds and it has taken me about 6 months.

Why have I just recently decided to make this blog more public? Simply put….I was embarrassed. I never thought of myself as big as I was, I always thought I looked….ok. I would buy clothes that I felt covered up what needed covered up, and I rarely took pictures of myself or was in pictures.

I was in a major denial.

I know I still have some ways to go, but I’m done being embarrassed. Those of you who follow me, like my posts, my pictures, my statuses on my Facebook page have no idea how much I appreciate your support and encouragement. You are the people I don’t want to let down, you are the people to whom I want to be accountable. So when I saw that one picture of my weight loss was seen by over 400 people I realized instead of being embarrassed, I need to be proud. Proud of how far I have come, and proud of what I have accomplished in such a short amount of time without gimmicks or surgery, simply with hard word and watching calories. Eating less and moving more.

So please continue to like my posts, share my pages, comment on what I am doing and add your own suggestions, successes and ideas. Whether is it a new recipe or a new workout, I am always looking for ideas to keep me moving forward.

Someone told me the other day that I was an inspiration. I’ll never forget that moment. I never set out to do this for anyone else, I was simply doing to for myself, to have something to look back on when I needed to see how far I have come. But to be someone’s inspiration, that really humbled me and encouraged me. I do not want to let that person down.

I’m not special. I was just a girl who was sick and tired of being fat and uncomfortable and not able to wear the cute clothes I always saw when I was shopping. I wanted to be able to be active for my family and for my husband and for me. You can’t do this for anyone else, you have to want it for yourself.

Be a little selfish. You are totally worth it.

Today, you inspired me.



New Healthy Food- Quest Protein Bars May 18, 2014

If you are looking for a new snack, low calorie, high protein, low carb, then meet Quest Bars. Holy Mary Mother of God are these babies yummy! Haven’t found one over 200 calories yet, and they take away the hunger pains when you need them to.  Found in GNC or Vitamin World, or ordered online at Amazon, these are by far the best bars I have eaten for the nutritional value.  Here are some examples:


My favorite flavors so far are Fudge Brownie, Chocolate Chip Cookie Dough, and Double Chocolate Chunk.

Now, here is what makes them more than just a protein bar.  There is a literal ton of recipes which can be made with the bars.

Simply google “quest bar recipes” and there a pre a ton of sites.  Instagram also has 15 second recipe posts.  Take any of the bars and out them in the microwave for like 20 seconds and you instantly have a warm cookie right out of the oven or a fudge brownie.

Their phrase is “cheat clean” and it really does seem like you are cheating.  I completely and totally recommend these bars.  Have fun watching the quick videos with recipes.  I know I will be trying some new ones this weekend camping for Memorial Day!


Healthy Super Bowl Party February 3, 2014

Yes, it is possible to have a great Super Bowl Party and still eat healthy!  This is exactly what we did last night!  Since we were witness to a somewhat one-sided, uneventful game, we had to take refuge in what exciting things we had prepared to eat!

Buffalo Cauliflower –  this was AMAZING!!!  Here is the link to the recipe.  I seriously think money could be made opening a cauliflower “wing” place  with different varieties of sauces.  Holey moley!


Garlic Parmesean Roasted Cauliflower – I was surprised at how quickly this disappeared, but wanted another option for those people who aren’t fans of the spicy wing flavor of the buffalo pieces.  Very easy….two  frozen bags of cauliflower,allowed to thaw and placed on a cookie sheet.  Spray with “Pam” or something similar to coat.  Sprinkle with parmesean cheese and I also used  garlic and sea salt.  Place in 450 degree oven, turning every ten minutes or so until they are nice and brown.  Even my teenagers ate this!


Veggies!  Baby carrots, cucumbers, green peppers, baby bellas, and roasted edamame (same method as cauliflower, but only sea salt).  Served with fat free ranch for dipping.

I can truly say that with these choices, I did not feel deprived at all on Superbowl Sunday.  I munched until I was full, knowing that these foods were healthy, fun and guilt-free!

What Am I Eating? January 2, 2014

As many of you know, and as I have said before, I am using Nutrisystem as my primary means of food. It worked two years ago, the food is actually really good and easy to make, and so it was an easy choice to go back to again. They provide you with breakfast, lunch, dinner, and a dessert daily. However, you need to add in veggies (lots of them), power fuels (proteins) and smart carbs as well as drinking a ton of water. So I thought I’d share some of my main “go to” foods that are yummy and easy. Remember, mom of two teenagers here, who is also a middle school principal and in doctorate school….I NEED….wait…..I REQUIRE easy when it comes to food or else drive through here I come….

Yoplait light yogurt – I’m typically not a fan of the Greek yogurt the world seems to have gone crazy over, so I do the light….but I’m trying out some of yoplait’s Greek yogurts and it’s not too bad.

Baby carrots and hummus – Love hummus! It’s easy and great with carrots and makes a quick snack while I’m at work.

Fizzy” water as I call it (carbonated flavored waters) – Sparkling Ice is my favorite, but our local Giant Eagle makes a good brand too. Much better than plain water or when you are MIO’ed out.

Edamame – my new favorite snack, and I am seeing it around more and more. In the pod with some sea salt sprinkled over it, or shelled and roasted in the oven until they turn golden brown. Yum!

These are just a few of my go-to’s. I switch them up when I get bored. I like trying new foods and am always reading what other people eat to stay full, healthy, and happy.

Second 5K Race April 7, 2012

This was my second 5K and I did not sleep at all last night. I kept waking up with crazy butterflies. I was more nervous than before the first one I ran. Maybe because ignorance is really bliss.
Jake and I got there early, pinned on our bibs, went potty one last time, and set off. We definitely ran more than we walked and our first mile was 12:40 seconds which is pretty darn fast for me. I tried making a playlist specifically for this race, but wasn’t that crazy about it. I’ll have to work on that.
We stopped for like ten seconds to grab a drink at the turn around point and finished at 41.09 which is about thirty seconds faster than my first race. That was my runkeeper app time, not their official time because I didn’t start it until I actually crossed the starting line mostly because I was in the back.
And for those of you who are afraid to run because you might be last….guess what…I think I pretty much was. Who freaking cares??? I did not care at all. I did it. I finished and did once again something I never ever could have done eight months ago.
